CHICKEN SOUP
This is a very straightforward recipe for classic chicken soup:

INGREDIENTS:
- Olive oil or butter (1 Tbsp)
- 1 medium onion, chopped
- Carrots (2 slices of; peeled)
- Celery stalks (2; chopped)
- Garlic (3 cloves; minced)
- Chicken broth (8 cups)
- Cooked and shredded chicken (approx. 2 cups; used rotisserie chicken or boiled some chicken breasts)
- Egg noodles (1 cup; or any pasta of your liking)
- Dried thyme (1 tsp.)

- Dried parsley (1 tsp.)
- Bay leaf
- To taste: salt and pepper
- Optional: chopped fresh parsley or lemon wedges for garnishing
METHOD:
1. Sauté the veggies
In a large pot, heat olive oil or butter over medium heat. Add onions, carrots, and celery. Sauté for about 5 minutes or until soft. Add garlic and cook for an additional minute.
2. Add broth and seasonings
Add chicken broth to vegetable mixture. Throw in dried thyme, parsley, and bay leaf. Bring to a boil.
3. Cook the noodles
When soupy broth is boiling, add egg noodles and cook until tender, about 6 to 8 minutes.
4. Add chicken
Incorporate the cooked and shredded chicken, and lower the heat. Allow everything to simmer for 5 minutes, just enough to let the flavors mingle. Remove and discard the bay leaf.
5.Season and serve
Adjust seasoning to taste. Serve garnished with fresh parsley and a squeeze of lemon if desired.
